My name is Amy and I am the creator and founder of Healthy Heart Merry Mind. My daughter was diagnosed with Celiac Disease at the age of 2 1/2, which was 9 years ago now and it was a very different time within the gluten free industry. Going to a restaurant was always very difficult and she came home twice from cross contamination and misinformation on the server’s part. She got very sick and was in severe pain for hours at a time. In 2014, I decided I wanted to train food service facilities on how to avoid this and created my manual on how to properly prepare and serve gluten free food. Although I received a lot of push back four years ago, I have found that restaurants are ready to take action now.
